Guess what NWH and I are Doing Tonight???

Guess what NWH and I are doing tonight??? You got it… going to a hockey game.  We went to one a few years ago and it was surprisingly very entertaining.  I’m not one who likes to see a fight…but if is on ice, away from me, and no one REALLY gets hurt (at least that’s what NWH tells me) then I can handle it!

COOKING isn't in the vows but it should be

On June 5, 2010 I pledged to be my NWH’s faithful wife, to love and serve him, in sickness as in health, in poverty as in wealth, in sorrow as in joy…ect. ect. ect. (ooo, maybe I’ll do my Wedding Word Wednesday on our vows?).

So along with this little promise thingy, I think I should have said... I promise to cook for you, with chicken as with beef, for breakfast as with dinner, in the oven as on the grill (hahahaha, I crack myself up sometimes)!!

I’ve been doing really well if I do say so myself, but I still have to have a recipe.  I’m too scared to just go out on a limb and try to create my own concoction.  That way if it turns out bad I can always say, “I followed the directions exactly, honey.  It must just be a bad recipe!”

So tonight we’re having mini-burgers and Lipton’s potatoes.  Now I know, I know, hamburgers are easy.  I could just salt and pepper them stick them on the grill and be done, but NWH said he wanted me to add Worcestershire sauce.  Why did he make this request?… no one knows! But he did, and if he wants Worcestershire in his burger, he’ll get Worcestershire in his burger!

So I’ve been looking up hamburger recipes that include this ingredient and have narrowed the choices down to three.

1 lb. lean ground beef
3 tbsp. chopped onions
3 tbsp. catsup
1 tbsp. Worcestershire sauce
1 tsp. salt
1/4 tsp. pepper
Dash of Tabasco sauce

Mix all ingredients together well and place covered mixture in the refrigerator for several hour to marinate, before grilling. Form hamburger patties in a dish with vertical sides to eliminate a thin dried edge when cooked.

NOTE:  NWH and I are kind of picky eaters.  We don’t like onions so I guess I could leave that out.  I also like that the meat gets marinated before grilling.  This may be the winner.

1 lb. hamburger
1 tsp. onion powder
1 tsp. pepper
1 tbsp. Worcestershire sauce
1/8 tsp. dry mustard
8 crushed Ritz crackers
1 tbsp. A-1 Steak Sauce
1 egg

Mix together. Make burgers into desired size and grill. Baste while grilling with burgundy and butter, if desired.

NOTE:  I read a lot of recipes that use eggs and either bread crumbs or crackers.  I’d like to try this, but I’m not sure NWH would like it.  Have any of you made burgers like this?  I would think it would be meatloaf “esc” and NWH and I are not meatloaf lovers.

1 pound ground beef, preferably lean chuck
1 tablespoon Worcestershire sauce
2 teaspoons dried chopped or minced onion
1/2 teaspoon garlic powder
Salt and pepper to taste
4 hamburger buns, white or whole wheat
Condiments and toppings

Mix all of the ingredients in a medium bowl. Divide into four portions and gently form into patties. Make a small indention in the center of each burger so it cooks evenly. Grill over direct heat or pan fry on medium-high heat to desired doneness. Serve with your favorite buns and toppings. My favorites are sliced onion, cheddar cheese, sliced tomato and yellow mustard, as shown in the photo.

NOTE:  This one is the simplest but is the only one that uses garlic powder, and I LOVE to use garlic powder.  I may add the ½ teaspoon to receipt one and call it a dinner.

What do ya’ll think?  Which one should I go with?  Any good burger recipes that you’d like to share??

I love birthdays.

It's my NWH's birthday!! He is a whopping 24 years old. The other day he said, “Am I going to be 24 or 25?” I said you are waaaaaaaaayyyyyyy to young to be saying things like that!

I love birthdays. I think what I love most is just making people feel special ON their day because we all know… the older you get the LESS special they begin to feel.

When you’re a child, a birthday is like a holiday! Whether it’s a slumber, movie, or backyard party, a celebration given by Ronald McDonald or Chuck-E-Cheese, life revolves around that big day! But the magic gets lost the older we get, and that b-day turns into any other ordinary day of the week.

Well, I am bound and determined NOT to let that happen to my NWH. He’ll have presents, cake, and his favorite dinner. Here’s what he’s getting…

Nike Air Span +7 available at Dick's Sporting Goods.  (He saw these a few months ago, but they didn't have his size).

Southern Miss Golden Eagles Nike Coaching Polo available at Campus Book Mart.  He loves football and he loves being up-to-date in his Sporting apparel.

His favorite cologne.  MMMMmmmm...this stuff smells so good, and I noticed a few weeks ago that he was out so it's the perfect present!  Tell me how good I did on these presents!!

Now for the good stuff...the food!

We'll be having his favorite breakfast, blueberry muffins and for lunch we'll probably go out and get something.  Maybe eat at Chedders or a sports bar.  For dinner I'm cooking (YIKES)!  No, it's a meal that I've made several times in the past few married months.  Hey, when you find something that works....WORK IT!  It's my BBQ chicken (made in the Crockpot), cream potatoes (courtesy of my watching my mother-in-law make them a million times), peas, and croissants.  How YUM does that sound for a b-day dinner!

As for birthday cake, we still have an entire Bruster’s ice cream cake left over from this weekend in Knoxville.  We'll be cutting us a big slice of that today too!!

Happy Tuesday everyone!  See you tomorrow for Wedding Word Wednesday!

P.S.  Here’s the receipts for those you interested!

BBQ Chicken (Crockpot Style)

Ingredients:
3-4 boneless, skinless chicken breasts
1 onion (sliced)
¼ cup of water
16 oz bottle of your fav BBQ sauce

Directions:
Slice your onion and use it to cover the bottom of your crockpot, pour in ¼ cup of water, place your chicken breast on top, and then cover them in your BBQ sauce.  Set Crockpot on high for 3.5-4 hours.  (You will love me if you try this!)

Cream Potatoes

Ingredients:
6-8 large red potatoes
Milk
Garlic SALT
¼ cup (1/2 stick) Butter
Hand Mixer

Directions:
Peel potatoes, then boil them until you can insert a fork straight through them (about 12 min).  Drain and add ½ stick of butter and begin mixing with a hand mixer.  Okay, this part is a little bit trickier!  I don’t know how much milk or garlic salt I add, but I gradually add the milk until it’s the consistency I like and taste with each addition of garlic salt (it’s takes a lot of this stuff).  Hint:  The more you mix the fewer lumps you’ll have.

Peas

Ingredients:
Can of peas
Butter
Salt and Pepper to taste

Directions:
Poor your peas into a small pot, add 2 table spoons of butter, and bring to a boil for a few minutes.  Reduce the heat and let simmer for 30-45 minutes.  The longer you cook these the better they are and the softer they become!  Add salt and pepper to taste.

Croissants

Ingredients:
Croissants (hahahaha)

Directions:
I buy Pillsbury garlic crescents and simply follow the directions on the package!

P.S.S.
Thank you followers for all of your encouraging words about moving yesterday!  Every time I got on my dashboard, I had another great comment.  I love ya'll and love blogging!!
